The spec should be on your B-pillar - look on the sticker that lists
the VIN and the date of manufacture, should also list a GVWR (Gross
Vehicle Weight Rating), which is the most that your vehicle should
weigh.   (Most trucks have a GCVWR weight rating which would include
the weight of a trailer, the C stands for combined)

Subtract the actual vehicle weight from that, and you can get the max
load they think you should carry.  There is most likely a large
SafetyFactor in this amount, so overloading for a short time, and
short distance, with careful driving, and the vehicle being in good
condition, should not cause a problem.

If that's still too much, just get some carbon fiber caps for the
water jugs, that should reduce the weight of each 5 gallon bottle to
about 20 lbs :-D
