To specifically answer your concerns:
The brakes seem to be a little trick to bleed in our cars- I've always
bled them twice, completely- do one full bleed, close it up, turn on
the car, feel the ABS pump cycle and destroy the nice firm pedal feel,
bleed again and all is good. Of course, this is much easier to do on a
lift rather than in a garage with a floor jack and jackstands.
If the clutch pedal is very hard, I would look at the bearings-
perhaps they were not installed correctly. A new clutch makes the
pedal much lighter. Releasing close to the floor is normal, though.
Rev match your downshifts- makes everything smoother, less wear on the
clutch as well.
Engine misfires probably have nothing to do with the plugs- I'd look
at the power output stage first- biggest ignition issue in those cars.
Sounds like you need to find an independent mechanic that is a German
car specialist, preferably an Audi specialist.
