I did this and am pretty happy with it.  I partially documented it here:

In addition to allowing a manual override, it lights an indicator on 
the dash when the thermoswitch closes on its own.  I have seen it once
or twice on a hot day while the engine was running.  
Cost is one defroster switch and a homemade wiring harness.
