I've tried a few difference tires, and my preference would be for any of 
the following (summer tires):

  Dunlop SP8000
  Toyo T1-S
  Dunlop SP9000

All of these tires are reasonably light (or at least not too heavy 
compared to other road tires), are quiet, handle _very_ well, offer 
good directional stability (good to have with 245 or 255 width tire, 
though the SP8000 have been reported by a few to tramline more than the 
other two though personally I have not noticed this), are not too harsh 
(the sidewalls are not too hard or soft, but this type of thing is very 
subjective and a personal preference), and offer predictable handling 
with lots of warning before breaking free in the twisties or under hard 
breaking.
