Technically speaking....
An open diff splits the torque 50/50 between the wheels, all the time.
A closed (locked) diff fixes rotation between the wheels, so by pure physics
the wheel with the most traction will get the most torque.
With one wheel off the ground this can create a 0/100 torque split.
A torsen diff is a dynamic version of both.  It will attempt to fix the
rotation but unlike the closed diff, it will allow some rotational
difference between the wheels.
Because it allows some rotational difference it can't create a 0/100 torque
split.

Simply put:  The Torsen diff sends power to the wheel(s) that have traction
as opposed to the open diff that sends power to the wheel(s) that are
slipping.  $300 is a more than fair price for the upgrade in cornering (or
Pauliepower sliding) handling IMHO.

I know this has been rehashed several times BUTTTT

What exactly do you gain by changing the diff?

I have two 93 S4's and would love to know how the car would change/improve
with a different diff.
