Brian,
I've considered using a dolly to pull a quattro as well. For me it's
for towing my urquattro to the track with my S6. I come up against a
few concerns but don't really know how to judge the risks.
On the big cars the exhaust is kinda in the way. On my urq with
custom exhaust, there's no problem here.
The CV joint on the driveshaft at the flage would end up exposed.
This isn't too expensive or difficult to swap out, but it'd be a pain
to have to replace a lot.
The center support bearing isn't the strongest of deals. If you
disconnect the rear CV, you'd have to move the end of the driveshaft
to the side and tie it up to the car somehow. The weight swinging
around under there while towing might wreck that bearing. That's more
of a pain to swap out than the CVs themselves.
The flage on the diff has threaded holes that don't normally get used
very often. Torque spec on these isn't too high, but in pulling and
reinstalling the driveshaft often, they might get buggered up.
And lastly is just the logistics of disconnecting the shaft. If you
jack up the car, disconnect it and then load it on the dolly, you'll
need some folks to help you push. If you drive it onto the dolly
first, then jack it up it's not really that super stable and I
wouldn't want to crawl under there and screw around.
Anyway, doing all of this once would probably be reasonable. To do it
twice for every track event would be a PITA. But the alternative is
to get a stinky pickup and trailer or make my local U-Haul rich.
