[s-cars] overheating dilemma

You may not be getting full water circulation through the radiator and
some of the channels may be blocked. It may need a good cleaning or
replacement. Thats my guess. Try a used radiator. Some radiator repair
shops sometimes inadvertently block off some of the core with solder.
It doesn't leak but it also doesn't transfer enough heat.
It also could be the air flow through the radiator core being blocked by
bug juice.

Another idea: The impeller on the water pump may not be connected to the
shaft and is slipping at high rpm. I have seen this a few times and it
slows down the circulation of water.

Just a few ideas that I'm sure that you have already considered.
