On this subject, an engine builder buddy of mine swears by this routine:

Put engine together with assembly lube everywhere.
Prime oiling system prior to providing fuel/spark.
Start car, let idle for 30 minutes.
Drain oil, change filter, install new filter/oil.
Let oil get up to temperature before moving the car.
Change oil in 500 miles.
Beat severely and often.

The rings will seat, depending upon if you're using copper, stainless or
chromoly, whenever they damn well please.  Just keep an eye on oil
consumption, which should level off by 5k miles, at which point you can
switch over to synthetic if your little heart desires.
