I don't have huge experience building engines, but I have certainly 
taken a few things apart and put them back together.  I have always 
trusted the specified gasket to do its job, and not been disappointed, 
including having to use two oil pan gaskets to install the 20v windage 
tray on a 10v engine.

Of course, you need clean surfaces and careful attention to torque specs.

(one exception here would be if you had a cork cam cover gasket.  only 
the rubber ones don't leak)
