The 2000's don't have ESP ( a plus) and the towers are aluminum compared to the steel ones on the 01-02's. Not sure about the rest of the weight.

Interesting on the weight.  I wonder where the 2001 got fat compared to the 
2000?  Does make the 2000 seem more attractive.  I know the 2001 is a "drive by 
wire."  Is the 2000 DBW as well?  That is one quality I've never liked.  The DBW 
feel is... strange.
 
2.0 with a GT30R?  Not this cowboy  ;)

I have driven numerous 2.7 S4s in various Stage 3, 3+,4 and 5 configurations. 
They are Gonzo with instant torque and no end to boost. A full 2.0 build 
w/tubular mani and GT30 turbo would cost less than half of a full 2.7 build. The 
weights of these cars is surprising.

1998 A4 1.8t- 3241 lbs
2000 S4 2.7t- 3384 lbs
2001 S4 2.7t- 3593 lbs

If you do go 2.7, I would definately go with a 2000. With your abilities and 
facilities, pulling an engine to get to the turbos won't pose too much of an 
issue other than your time.
