Eric -

IME any properly running Audi motor including MC/7A/AAN/various 1.8T's/etc.
maintains a rock-solid temperature whether you're running through blizzards
at 80mph or driving in town in summer heat.   the only exception to that
I've ever seen was the start of overwhelming the stock cooling system on an
MC in over 100F outdoor temps in creeping freeway traffic jam (did I mention
my AC didn't work?), and even then it only just began to edge up. So from my
experience, I would not assume the temp should fluctuate at all during
driving (at least when working properly).

you did the t-stat but the MFTS is a famed culprit, are you sure it's good?
also to Seans point, some parts vendors wrongly list an 80C t-stat for the
AAN.  could you have a similar issue?
