Just mount the thermostat with the support vertically so the fluid
can flow out sideways into the housing without restriction.

If you have the housing off already, you have gleaned the important
part, anyway, which is how to get to the bolts.  Just make sure the
thermostat isn't backwards, put the support vertically, the o-ring on
  the correct side, and the housing seated fully before tightening the
bolts.  If the housing is showing any age or damage, get a new one
right away.  They are cheap-aftermarket are available also-and they
will get brittle with age and you can break it forcing a hose end on it
or tightening the fasteners too tight.

Do the job right and your expensive Audi fluids will last the advertised
lifetime, or two years, which ever comes first.  : > )
