sounds like you are talking about the radiator thermo-switch:

It controls the fan speed.

These are the wires that go to the sensor from the car. The plastic
connection that they all ran through to plug into sensor receptor (see
below) got destroyed.

This is what the back of the sensor where the wires from the car plug in.
There is obviously a right and left side, meaning the wires have to be
connected to the correct prongs.
