For my 97 Boxster all you have to do to restart it, is have the ignition switch on and let out the clutch.
The clutch interlock affects only the activation of the starter not the firing of the spark plugs. BTW
I just tested this on my lunch trip for a $5 footlong tuna on wheat.

Also, on a manual transmission car, if you can shut it off while driving,
it's a PITA to restart- most have clutch interlocks these days so you have
to remember to depress the clutch fully in order to restart- not necessarily
that easy to remember in an emergency situation- how often does anyone stop
and restart one's car while in motion?
