Jim,
The Bentley procedure is to loosen the nut until both levers on the
calipers just rest on the stops, then tighten the nut until the levers
lift off both stops, then back off two turns. Check that both levers
rest on the stops by pushing with a screwdriver checking that the
opposite side does not lift. In other words as tight as the cables
can be to still allow the brakes to fully release. That means you
have to make sure the rear brake pads are correctly adjusted. The
cables will not stretch so Cody's 3 clicks is about right IMHO.
