I did a nice Siemens Bluetooth embedded connection with a ProFit mount (moving the passenger heater switches) back in 2005.

For the next refresh, I'm today considering this solution from mp3car...

It requires jailbreaking the iPhone, and installation of a screen, but I may be able to find a cheaper screen solution.
