The issue won't be the fluid. The urq stuff is all quite capable of running with Pentosin. In fact, the current parts fiche gives the G002000 P/N for these older systems. I wouldn't use ATF with any of the newer stuff, but Pentosin is fine for everything. Since you mention ATF, I presume you have a WR or WX model which uses a single-circuit vane pump. The MB and RR have two-circuit (tandem) pumps. In the older system, the pump's single output is sent to the valve body/bomb unit, which regulates pressure sent to both the steering and the brake assist. The tandem pump has two outputs--one for the bomb/brakes and one for the steering.
To use the newer pump, I think you'd need to change the rest of the hydraulics. The newer steering racks probably run at a higher pressure which your original rack might not survive, though I don't know for sure. You've also got the bomb/valve body with the output to the rack that becomes redundant.
I presume you meant to type AAN instead of ANN (which is a 75 hp Golf engine). If the pump you're thinking of using is the one from the AAN, I definitely would not use it. The AAN was used in the larger C4 chassis, and their steering systems run at even higher pressures (one reason they tend to leak more). You did ask specifically about the pump used on the S2 (ADU), so that one should be fine, assuming you get the rest of the hydraulic parts.
