Andrew,
I have both of my cars insured under classic car insurance:

I had to appraise the cars first. The appraiser will then recommend that
the car should be insured under the classic car insurance and that is what
the insurance company uses to write up the policy. Make sure they use the
non depreciating policy.
Just make sure you stress to the appraiser how rare the car is, give them
list of production/import numbers, articles from magazines etc. etc.
Obviously the car can not be used as daily transportation and in fact they
ask for proof of insurance on your daily commuter or a letter stating the
intended use of the vehicle (shows, car club gatherings, weekend drives
etc.)
