One of the tricks I use is to remove the engine with the mounts intact i.e.
just removing the chassis bolts that hold the mounts in place and dropping
it form there.
This way you install the mount assemblies onto the new block and you already
have the engine aligned the same way as the old one.
As you are raising the new engine the mount bolt holes will act as a guide.

I have used 2x6 lumber remnants on the jack stands to spread the load
positioned under the forward most unibody with the car as high as I could
get it. Height is your friend here.
The entire sub-frame will drop with only 8 bolts to remove.
Taking the motor out the bottom really isn't as bad as it first appears.
