My heart is to always attempt to let them live out their lives (if any is left) on the road. That's my heart. My brain says that's stupid.
Having lived with 2 of these for over 10 years, sorting, engine swapping etc, it has to be a labor of love. Investment rational will not hold up.
There have been?some that have given their lives that others may live. I had one of those. Hit and run driver took it's life prematurely.
Many CGT, 5KT, and 4KQ parts (not to mention 200 20V Turbos) can be used to bring them back from the edge. Windshields and fenders are next to impossible to find.
Has the rust monster done too much damage? Seats & dashboards can be had, as can?engines tranny's and rear diffs.
If I had the room, I would love to put it back to roadworthy, but alas that is not the case any longer.
Keep us posted as to it's future.

I have a 1982 European Quattro Turbo Coupe that was bought new by my
father. The car has been sitting for several (over ten) years now, and
has not turned a wheel or been started during that period.
Furthermore, it's been sitting outside (New England), so the body and
interior are in pretty poor shape now.
I've kept the car in the hope of one day restoring it, but that hope
is looking increasingly remote at this point. My options are to scrap
it, or try to sell it to someone who might be able to use for parts (I
imagine restoring it, given its rough condition, would not make
economic sense.)
Any advice / opinion would be greatly appreciated.
