Remember that that "extra 5mm" in the offset is actually pulling the tire further into the wheelwell. IE.... 16x8 et40 vs ET35. The ET35 will stick out 5mm further giving more tie rod clearance but less fender clearance. The ET40 sits further in the wheel.
I just test fit some 16x8 wheels w 225/50-16 slicks on my urq and as you noted, the fronts hit the tie-rod badly. On my other urq I have 5kt front struts with coilovers which flip the tierod to enter the steering knuckle from the top. These should clear those wheels just fine. If so an option wold be to either swap in some modified front struts or if you dont mind cutting up your originals, drill the hole out and flip it with a heim jointed end. If you ever plan on going coil-over though then the 5ktq front strut housings work well and once the spring perch is cut off they are very similar to the urq housings.
