What are you looking to accomplish? IME, running anything lower than the stock 87c thermostat is a bad idea. The cooler thermostat makes the engine slower to get to operating temp (bad), run rich (bad), and kills fuel economy (a cool running engine is inefficient). On top of that, you will see more deposits in the engine and likely LESS power.
Going with a cooler fan switch isn't a bad idea, but I would stay with the stock thermostat. Going with a larger oil cooler is also a good idea if you are running a lot of boost. The idea is to keep the oil at 100c. Hot enough to boil off any water, etc., but cool enough to keep the oil from breaking down and to cool the pistons properly.
