[V6-12v] Flashing Temperature Icon

Thank you to all that suggested how to fix the windshield fogging problem.  Now the car is flashing the water temperature icon.  I noticed that this morning and when I checked the water tank was empty.  My wife drove the car yesterday so I will have to ask her if this icon was flashing while she was driving.  I probably will not get a straight answer, but I will try.

I did the bypass of the heater core and filled the tank with water and antifreeze.  It still starts flashing after about 30 seconds of operation.    If it is just a bad sensor, maybe I can keep operating the car with no further problems,  The water pump is not leaking, so I do not think that I have a problem there.  

1- What could be causing the flashing light?

2- Will this fault cause a shutdown of the car?
