[V8] V8 suddenly running like a coffee grinder above 1700 rpm

Check out your coolant temperature sensor.  There are
3 on the V8....the one you should start with is the
one on the back of the passenger side head.

If that doesn't work out....change your fuel pressure
regulator....if that doesn't do it, change your fuel
filter.

Repost if these don't solve your problem, but I bet
it's your temp sensor.
