[V8] Trouble finding a coolant leak

Your symptoms commonly are described for a leak from the seal at the rear
of the engine at the plumbing for the coolant reservoir.  I think it's an
O-ring.  Coolant "disappears" onto the exhaust.  There's also the
possibility of a head gasket leak.
