[V8] Need advice and help

Sorry about your troubles. Suggestions follow:

Windshield

I'd check with one of the local windshield replacement places.  Often,
they'll run a special (like they will pay your deductible up to $100), and
since you'd be paying OOP, they may give you a good deal (like under $300).

Coolant Light

Are you sure the light that comes on is the engine cooling light?  Red
thermometer in water moving display?  If so, that may be indicative of  a
defective coolant level sending unit (under the expansion tank).  See what
happens next time when this comes on and you disconnect this sensor (just
unplugs from underneath).

Sunroof

Do you hear a click at all when you hit the switch?  If not, check to see if
the switch is a) working  b) motor is plugged in or c) the relay under the
pass footwell is connected.
