It is times like this when having a VAG1551/1552 equivalent may be of
the most assistance.  With ProDiag you can capture data from the ECU as
the engine is running and see what inputs the ECU is getting for the
engine temp and such.  The V8 isn't as forthcoming as newer cars, but it
might add some clues ... 

I don't think you reported codes that the mixture adaptation was unable
to keep up ... if you were getting them it would indicate that perhaps
you could use a fuel pressure regulator ...
