[V8] Stumbling Engine...

So...I did the bad-bad thing--cleaned my engine.  Used VERY little water and no high pressure squirting.  Now: starts instantly, idles smoothly (as always).  Runs fine, good gas mileage, accelerates smoothly--except if you put your foot all the way down to the floor.  Then it absolutely cuts off (like an ignition failure).  If I back off a bit it immediately starts up again...  Any suggestions?
