What's the diff?
Pol-ish
Po-lish

Actually polish as in shoe polish should really be pollish to keep the
O from being pronounce OH.  The rules of pronunciation say that 2
consonants after a vowel mean the vowel should be pronounced in its
short form, in this case kind of like AH, as in pahlish.

Polish, as in the nationality, is spelled correctly according to the
rules of pronunciation.  A vowel followed by one consonant is
pronounced in its long form, so OH as in p-OH-lish.
