Actually I built a bracket for turning UFO brakes right here in Worcester MA! Used it successfully twice on my '91 V8Q. I just gave it away with my parts car to fellow lister Allan Vega. Essentially you bolt this heavy aluminum bracket onto the "out" side of the UFO rotor and chuck the bracket into a 13 inch or so lathe. This spins the rotor so that the inside is out. Facing the inner (now outer) surface is trivial. The outer (now inner) surface requires a simple offset boring bar tool through the center opening of the rotor. Actually not hard to do at all--but I'm not sure I would trust your average brake shop. I always did it myself at the university's machine shop. After the first turning, it was still within the stamped min thickness--50K later they started feeling in need and I believe I got a used pair from Maurice in Portland. I turned these as well and they were still perfect 40K later when I finally sold my car last fall. IME, you can turn UFO once before they are no longer usable.
