I may have missed something, but what about your OXY sensor? 
Since you changed your cats I assume they might have been ruined by mixture issues.
I would also check the wiring as I one had some major running issues that I traced to busted OXY sensor wire, likely when I let the monkey lads change my transmission fluid (it was in the middle of the winter).

Replaced air flow meter. Injectors, Fuel pump, filter, cats(cat light came on), 
knock sensors, ISV, Hall sender, plugs, wires, ?timing all in order. There might 
be more.?
