The problem with an "automatic engine shutoff" scheme as you described is
that the engine may disable at the most inopportune moment, possibly
causeing an accident.
The best "engine shutoff" device is the operator. If you can connect an
attention-getting tone or buzzer (such as in the later A2 Jettas) that will
activate when the oil pressure reaches a certain level, you can quickly
pull the car off to the shoulder and check the problem (which again is much
more preferable than having it shut down in the middle of the freeway).
Since you are already using a digital metering system, this should be a
simple retrofit.
