1.  The the valve order you listed is correct.

2.  Worn convex? I've never seen a shim wear un-uniformly. I'd replace any shim
worn like that. Perhaps they are not worn that much.

3.  They wear ever so slowly. I maybe had to go one shim thickness thinner
about three times in 200,000 miles. That's on three valves at different
times ONLY!
