[Vwdiesel] Jetta Engine in "The Thing" ?

The "Thing" used an air-cooled VW pancake four, like those found in
earlier Bugs.

That said, any engine can be made to fit with enough money and effort.
An old VW-Trends magazine featured a Porsche Carrera with a Chevy V8. It
actually fit in the engine bay.

Fitting the engine aside, you would be faced with adding a cooling
system where one didn't exist before.
