  From what I've read on the subject you can do hardened seats or 
hardened valves.  No need to do both.  The idea is that hard particles 
imbed in the soft valve seats, and grind away at the valves, or vise versa.
With one being hard, just the imbeded particles don't do any real 
damage.  Both are just considered overkill, but wouldn't hurt I guess.
  Any seats sold nowadays should be of the hardened variety.  It 
sure wouldn't hurt to make sure though.
