Wow, nice numbers! woo hoo, hubba hubba. ;-)

Yes you can. VS seals tend to make a good sized cloud at startup
though. Oil drips and runs down onto the piston or puddles on the
valves overnight.

Plastigauge. I have to do that on the new head for Dad's pickup. I put a
dial indicator above the edge of a bearing and have over .002 movement.
First time I've heard a cam go kladunk as I flipped the head over! Gotta
check it out carefully and maybe get it exchanged. We don't need
ANOTHER low oil pressure thread!

That should help with the black smoke. It's normal to see SOME black
dusting on the back end of your Jetta but it shouldn't be quickly
noticeable after a wash. Shouldn't be thick either. No Neil Armstrong
footprints!
Try a shot of WD-40 on, around, under the throttle springs and see if
that helps at all with your idle.
Sounds like your low oil pressure is (well, the two most common causes
are...) worn oil pump or flaking intermediate shaft bearings. Pump's easy,
bearings mean pulling the engine. :-P My Jetta had low op and a
full rebuild still had the buzzer coming on although not quite as often.
It had a really worn 30mm oil pump. Since I had to replace it anyway, I
put the 36mm big hummer on it. :-) No more low oil pressure!
