[Vwdiesel] Correct way to remove frost plugs?

Title says it - I think I have determined at least one *incorrect* way - drilling
the centre and trying to pry out, which took a lot of fiddling and chiselling.
I'm guessing drilling, then insert a threaded bolt & pulling somehow would
work better? How about the little oil gallery plugs (about 12-14mm in size at
each end) - or should I leave these for the shop to do?
I wanted to pull the big plugs just to have a look, and decided to drive out
the int shaft bearings as well.
I'll need to get a shop to press the bearings in, even if I don't have it tanked
(probably will now). Not that it looks that bad inside, I just don't have any
stray metal bits floating around.
