Just use two Nuts, one to lock the other.

I am replacing the tensioner pulley on a 1982 diesel rabbit car. The motor
mount bracket is interfering with the pulley sliding off the end of the bolt
stud. It is close to coming off, but after 30 minutes of unsuccessfully
trying every rotation of the eccentric hole, I thought I'd ask the more
experienced. If the stud has backed out, what is the best technique to turn
it back in, etc.
