1. My Oil temps on my 1.9na are higher then this, 220F to 230F, so not high there.
2. Boost is OK.
3. Sounds like you have an issue with the EGT for sure, most likely wiring.
4. I would say you have air in the system, Nick from NC had the same issues when he first ran his motor after getting the new head back on.
5. Oil Pressure, on my 1.9na it hits 130psi on a cold start in the winter, then as things warm up (and the pressure relief valve finally pops) it come down to 90psi and then when hot 30psi at idle to 65psi running down the road. I have a sticky pressure relief valve for sure in my oil pump.
