There should be a water inlet/outlet on the head that faces the radiator. In that inlet/outlet there is usually a thermoswitch with two (2) male prongs, as well as another temperature sender. That location is near the middle of the head, between cylinders #3 & #4.

I'm finally about done putting an engine back in my 1982 Jetta, and
I'm having a problem finding the A/C thermoswitch. I found it on the
wiring diagram, but I haven't managed to figure out where to look in
the Bentley to tell me where on the car it is. (Air conditioning
doesn't even seem to be in the index at all.) I even know that it
can't be too far from the compressor because of the length of the
wires, but I sure can't seem to locate it in the car.
