Funny thing my truck did the same thing last night when starting. I think you have more then one issue. If you had coolant going into the cylinders you would see white smoke on start up (just as the mining equipment does and my rabbit car did). Also if you had a glow plug problem like my truck this morning and last night it will have white smoke. The coolant is white when it burns just because of the chemicals but the fuel is white because it is boiling it and not burning it. Are you sure there wasn't any white smoke. It would start after a bit even with bad plugs as the compression would heat up the cylinder enough after a bit to be like a glow plug at that temp. Enough coolant in the cylinder and it will lock up if attempting to start just as a warning and blow some things out (head gasket most likely) Radiator leak would be a likely thing. Also fluid does contract and expand so if you haven't checked at a cool temp in the previous days maybe it just was a little lower from contraction. Also maybe your cap is letting pressure out some and letting the steam vent out. After going over the mountains with mine my coolant is a little lower. My local radiator guy even said that the coolant may have a point that it will settle to on how much you need to fill your tank (mine is just under the fill mark, if I leave it there it doesn't move, if I fill it more, it goes back to that point)
