Just for reference for everyone: Last night I cooked chicken wings in oil that I've had for two years!
Bought it to cook the 2008 Thanksgiving turkey. Then the oil sat in my garage sealed in the original boxes (keeps air and light away) and it cooked the 2009 Thanksgiving turkey. Cooked some wings a couple times last winter and then the oil was stored away in the same manner again until this last Thanksgiving, where it cooked it's 3rd turkey.
I figure (from info gained on this list when considering it's use for the 2009 turkey) that if it doesn't taste funky and doesn't smell funky, it is probably ok. Sure helps me feel better spending all that money for the oil if I can get a lot more use out of it.
I'm thinking that I'll keep my eye out for fresh oil on sale between now and next year's Thanksgiving and get a fresh batch then.
Moral of the story: If it doesn't smell funky, burn it!
