That really sucks, sorry to hear about the car, be thankful *you* are fine.

Sounds like a comprehensive claim to me if you have it. Otherwise, strict
responsibility will have you completey removing the interior yourself if you
want it done well.

There are tricks with absorbent materials, but nothing like physically
removing everything down to the foam under the carpet. I believe it is
mildew resistant, but the sun is way better than something dry laying on it
2 layers up.. If you just had that much standing water in your car and dont
dismantle as much as possible, thoroughly drying before re-installing, I
would dread owning such a car, and I do my best not to dread in life.

Its not just the dank musty issue, consider how wet the rest of every
electronic connection got as well as everything else.
