Just an update... I've settled on a product from Home Depot of all places.
Foil-backed self-adhesive duct insulation.  Comes in a 12" by 15 foot roll.
It's an eighth of an inch thick and claims to have an R value of 3.  But
don't even bother to try it without a can of 3M spray adhesive #77.  You
need it to give the adhesive on the foam a fighting chance.  I'm more than
half way done and the results might look a little weird, but it gives the
interior a finished "feel" that the bare metal just didn't have.  I hope I
can finish it with the material I have left, as the roll itself was $17 and
the can of 3M #77 was $10.  Yeah, I'm a big spender...

Thanks Matt.  I neglected to mention, my Rabbit is originally a Wisconsin
car, and the roof had caved in from their monstrous snow storms repeatedly
over the years.  The metal supports are no longer welded to the roof, and
there is a gap along them all which I've filled in with that spray-foam
crack filler.  The entire roof used to ring like a giant bell every time the
doors or hatch were closed.  It's much better now, but I would like a bit of
insulation for the winter.  Thanks very much for the link to your site.

There's around 12 pictures of the various steps.  I did do the rear part a
bit incorrectly, we'll see if I correct it or not.  Also I need to redo the
sunroof, but all in all, it's about what you'll run into.
