[Vwdiesel] Thermostat for 1982 NA diesel

Anyone have suggestions for manufacturer and heat range for NA diesel thermostat driven in the north Texas area?
I tried to recall what I have read about them and thought that either 82/180F or 87C/188F would be fine, but the 87C/188F would be best.
I have found the following brands; Wahler, Behr and Stant. Anyone better than the other?
I do have the equipment, thermometer, pan, etc to test the functionality. TIA.

I think my thermostat is stuck in the closed position as I run out of coolant in the expansion tank after about 6-7 miles of driving.

Will have more data collected later.
