The OEM "all season" tire for the 1991 Coupe Quattro was
the Dunlop SP6, 195/65/15, H speed, M+S rating.
Mine have 24K miles and they are still going strong.
Excellent in rain and snow, but just "good" for dry.
They are $69 at the Tire Rack.

Some other tires I may consider when it's time to replace
are Dunlop's new V speed M+S (D80-V, I think) and BFG's 
CompT/A VR4.

Please tell us when you make a decision.
