I've had my 87 5000S quattro die on me about ten times (over a two year period)
coming down to idle.  It also had an idle that hunted, between 600-900 RPM,
overall not very smooth at idle.  Once up to speed, it ran fine but did not get
good mileage (about 5 MPG less).

It ended up being a cracked rubber hose that goes between the idle control valve
and the intake manifold.  It was cracked on the bottom side.  $15 dollars later
and about 20 minutes work, it was fixed, my car idled perfectly again, and
mileage was back.

If you open your hood, put your hand on the rubber tubes that connect the idle
control valve to the intake manifold and feel and listen for leaks.  Also make
sure the clamps are tight.

I don't know if this is your problem, but it might be.
