I've had good luck disabling the ABS in some of the cars I've raced by
pulling the fuse that powers the ABS brain ... or in the case of those
"stock" cars where this wasn't legal, "accidently" blowing the fuse.  :^)  
I imagine wiring up a switch to perform a similar function shouldn't be too
difficult.
