The car could indeed be running too cool. Bentley states the oil
should be at at least 176° at operating temperature. If the
thermostat is stuck open (ie broken), the car could fail to reach its
designed operating temp..
Some tuners like to sell 160° thermostats (mostly for Mustang 5.0's),
claiming the lower operating temp. will allow for more dense air
(supposedly because its at a lower temp) to reach the cylinders,
therefore more air, more potential power. In reality, the engine
takes forever to warm up, and I see increased engine wear because the
oil is not up to its designed operating temp (and viscosity).
This being said, in your case, I would actually think the gauge is
probaly not that accurate. Why not measure the coolant temp. with a
good thermometer (like a candy thermometer)? Your thermostat could
be changed while you are at too, its good preventive maintainence.
While we are on the subject, what are some good sources for all Al
radiators for 5000csqt's? (as well as intercoolers)
