You *can* do it this way but you're only 12 bolts away from doing it on the
workbench where it's a MUCH easier job ... also, cleaning the old grease out
of the CV joint is a lot easier, too. That said, when I replace the CV
boots on my cars, I rarely remove the inner CV joint ... if you're really
careful, you can clean all of the old grease out without the joint falling
apart and just slide the new boot on from the other end (greasing the shaft
itself helps).
